We (especially me) are always trying to come up with new and healthy dessert recipes that can be part of our diet. Justin and I came up with this delicious dessert today, and it is only roughly 210 calories, 9g fat, 1mg sodium, 25 carbs, 20g sugar, and 4g protein! The recipe makes 4 crostatas!
HEALTHY APPLE & ALMOND CROSTATA
Ingredients:
- 1 medium apple
- 8 Tbs. almond paste
- 1 container Dannon Light & Fit Greek yogurt, vanilla (or any non-fat vanilla Greek yogurt)
- 1 Tbs. egg whites
- juice of 1 lemon
- zest of 1 lemon
- sliced or chopped almonds, for garnish
Directions:
- Thinly slice and core the apple. Place the slices into a bowl. Sprinkle the lemon juice over the apple and mix well. Set aside
- Take one container of vanilla Dannon Light & Fit Greek yogurt (or any non-fat vanilla Greek yogurt) and it into a small bowl. Fold in the lemon zest and 1/2 Tbs. egg whites.
- Cut the almond paste into 5 different pieces. Discard or freeze 1 piece for another time. Take the small pieces of almond paste and, using a rolling pin, roll them out until almost flat. Make sure you can still not see through them, and there are no holes or tears.
- Place 2 Tbs. of yogurt mixture on top of each rolled out dough (there should be 4).
- Separate apples into fourths. Place apples on top of the yogurt mixture.
- Carefully fold the edges of the “crust” around the edges of the filling and put onto a non-stick lined baking sheet. Remember, it does not have to be perfect! Mix 1/2 Tbs. of egg white and a splash or 2 of water together. Brush over the crostatas. Bake in the oven for roughly 20 minutes or until golden brown on top.
- Garnish with chopped almonds and allow to cool. It’s ready to eat!
